Which Soc has in built support for high ADC sampling rate for Data acquisition. In other words which SoC is built for Data acquisition in Toradex family.
That would definitely be the Colibri iMX7 as well as the Colibri VF61 which both use the SoC integrated ADCs. Depending on whether or not your use case involves a resistive touch screen as well the Colibri VF50 may be equally suited. The exact sampling rates depend on various other factors which you may find more information in resp. SoC’s data sheet. Please further note that if you really need a very high sampling rate a special dedicated ADC solution e.g. connected via SPI or even a parallel bus may prove a much better solution.
